  • 6 eggplants (large)

  • 4 tbsp tahini

  • Juice of a lemon

  • A clove of garlic

Bean Burger RecipeIngredients:

  • 2 cans of beans (normal tarif 1 can sweetcorn 1 can chickpeas'di)

  •  ½ of fresh coriander

  • ½ tsp paprika

  • ½ tsp ground coriander

  • ½ tsp ground cumin

  • 3 tbsp of flour

  • 1 lemon

Method:

  1. Rinse and drain the beans. Put them in the food processor. Pick the coriander leaves and add them too.

  2. Add in the flour, spices and just a pinch of salt. Grate the lemon and add in the mixture. Mix until all ingredients are combined.

  3. Divide your mixture into four patties. Leave in the fridge for half an hour.

  4. When the BBQ is ready, take them out and gently place on grill over medium heat. Cook for 10 minutes; make sure to flip the patties halfway.

  5. Finish off your serving with veggies of your choice.​

Grilled Mushrooms Recipe

Ingredients:

  • 4 garlic cloves, grated

  • 2 tbsp sugar

  • 2 tbsp olive oil

  • 2 tsp soy sauce

  • 1/2 tsp kosher salt

  • 1/4 tsp freshly ground black pepper

  • 500 grams cremini mushrooms

  • 10-12 wooden skewers

  • Fresh parsley leaves​​

Method:

  1. Put the garlic, sugar, olive oil, soy sauce and pepper in a large bowl and mix. 

  2. Cut the mushrooms in half and add them to the marinade. Let it stay for half an hour.

  3. Thread the marinated mushrooms onto the skewers. Then put them on a medium-heated grill. Cook each side for a few minutes until tender. 

  4. Take them off the grill and serve with some chopped parsley on top.​

A Quick Salad With Everyday Items: Köz Salata

This time, instead of meats, we're filling the whole grill with veggies. When most of the ingredients that can be found at home are roasted, it can turn into a very delicious salad. Since cooking times are different, you can give priority to eggplants and onions, and add peppers and tomatoes later.

Köz Salata Recipe

Ingredients:

  • 4-5 eggplants

  • 3-4 red peppers

  • 3-4 tomatoes

  • 1-2 onion

  • 1 garlic clove

  • 1/2 lemon

  • Parsley

  • Fresh mint

  • Olive oil

Method:

  1. Roast the veggies on the grill.

  2. Peel the skins of roasted veggies and thinly dice. 

  3. Add the grated garlic to the veggies.

  4. Add olive oil, parsley and mint. Mix all the items well.

  5. Take the salad to a bowl. Drizzle more olive oil according to your taste.The salad is ready for service.

Deliciously Fresh: Tabbouleh 

Tabbouleh is a fresh mezze that fits well amongst all of the recipes above. Trust us, everyone will take Tabbouleh to their plates, spoon after spoon. Also, you can make this already light recipe even lighter with a little change. Just use quinoa instead of bulgur. You can be sure; it won't lose anything from its taste. 

Tabbouleh RecipeIngredients:​

  • One cup of fine bulgur or cracked wheat

  • 4 tomatoes

  • A handful of flat-leaf parsley

  • A handful of fresh mint

  • 3 spring onions, thinly sliced

  • 1/3 tsp ground cinnamon

  • ½ tsp ground allspice

  • Juice of a lemon

  • Extra virgin olive oil

  • Salt 

 Method:​

  1. Cook your bulgur by pouring into a bowl and just covering in boiling water. Cover the bowl for twenty minutes and then stir once uncovered, fluffing up with a fork as you go.

  2. Whilst the bulgu r is cooking hold the herbs in a tight bunch and slice them into crisp thin strips. 

  3. Cut the tomatoes into pea-sized dice and drain any excess juice. 

  4. Mix through with herbs, spring onions bulgur, add cinnamon, allspice and season. 

  5. Drizzle lemon juice and use gem lettuce to serve, letting people scoop up the tabbouleh.

Craving Something Spicy? Make Creamy Hummus with Roasted Peppers

Who can say no to creamy hummus? What do you say to try something new and adding some flavor to this classic with red peppers you can roast in the BBQ? Red peppers will not only add color. Their flavors will also be infused and at the end, you'll have some delicious hummus. All you need to do is following the steps in the recipe below.

Creamy Hummus with Roasted Red Peppers Recipe

Ingredients:​

  • A bowl of chickpeas

  • 2 red peppers

  • Extra virgin olive oil

  • 2 garlic cloves

  • 100 ml tahini

  • 1 lemon

  • 2 tsp of salt

 Method: 

  1. Place chickpeas in a large bowl and cover them with 5-6 glasses of cold water and leave them to soak overnight. Next day, drain the chickpeas.

  2. Place them in a medium saucepan, add 3 glasses of water, 2 tsp of baking soda and boil the chickpeas about 30-40 minutes. Cool enough the chickpeas and peel them. Peeling the chickpeas makes your hummus smoother.

  3. Roast the peppers on grill until they're soft and leave aside to cool down.

  4. Place the peeled chickpeas and the peppers in a food processor, blend them a full minute.

  5. Then add 3 tbsp of olive oil, 2 cloves of crushed garlic, 100ml tahini, juice of a lemon, 2 tsp of salt and continue to blend. Add olive oil or 1-2 tbsp of water until you get the very smooth and creamy result. 

  6. Taste and add salt or lemon, if needed. 

  7. Place the hummus in a bowl, drizzle it with extra virgin olive oil and sprinkle with cayenne pepper.
