Pita Recipe: A Fluffy Sidekick to Every Mezze
We always say 'rakı is not a solo act'. It is not just about who is around the table, but also what is on the table. Sometimes you prepare a couple or two but most of the time the plates are full of mezze. A traditional plate consists of some white cheese, tzatziki, hot spicy tomato dip. It doesn't matter which mezze you are having, there is always a sidekick: pita.
Pita is actually one of the most delicious flatbreads around the world but most common in the Mediterranean and the Middle East. Due to its fluffy texture, it can be paired with almost anything and everything. Don't get intimidated, it is easy to make and no need to bake! It doesn't need so many products and all the ingredients are the ones you always have in your kitchen. Curious already? Here is the recipe.
Pita Recipe
Ingredients:
2/3 cup water
2/3 cup milk
1 tbsp dry yeast
1/2 tbsp sugar
3,5 cups flour
2 tbsp yogurt
1/3 cup oil
1 tsp salt
Method:
Mix water, milk and sugar and dry yeast in a bowl and set it aside for 10 minutes. The mixture will get bubbly when the yeast dissolves completely. Place the flour on the counter and make a pool from it. Add yogurt, oil, salt and the bubbly yeast mixture to the center that you emptied. Start mixing the ingredients all together to make a dough. You should add the flour slowly to the center from the sides. Knead the dough until it gets smooth and soft. Put the dough into a bowl that you oiled and cover the top. Keep it rest for an hour, an hour later it will double its size. Remove the dough from the bowl and divide it into 6 pieces on a floured place. Flatten the pieces with your hand first then pull the dough from the sides and stick the sides underneath of it. Roll the dough pieces with a rolling pin a bit for turning them into round pitas. Lay pita bread on a hot pan and flip the other side when it starts getting color.
