Recipe: Melon Sorbet With Yeni Rakı
It is said that in a rakı table melon is white cheese's queen while white cheese is its king and rakı is their best man. Based on that fact and our experiences, melon is traditionally and inseparably one of the lightest mezzes on Yeni Rakı tables. It is always fresh and gives dynamic feelings while drinking. And for God's sake, it can be found in every season to accompany with your table and sincere conversations.

At that time we don't go away so far. We combine Yeni Rakı with its traditional friend, melon to have a delicious melon sorbet. What kind of melon will you use in sorbet? Actually, you can choose any kind of melon for your sorbet but perfect one is a traditional legend, 'Kırkağaç' because when it has been frozen it has a remarkably creamy texture that almost tastes like ice cream and also it is more 'floury' and white, instead of crunchy and orange, which makes our sorbet irresistible to eat.

Melon Sorbet Recipe
Ingredients:
3/4 Cup Water1/2 Cup Sugar
1/2 Melon
2 tbsp Yeni Rakı
Method:
Pour 3/4 cup water in a saucepan and add 1/2 cup sugar. Make a simple syrup over medium-high heat. Heat until the sugar has melted and the mixture has come to boil.
Cut 1/2 melons open and carefully cut off the rind and discard them.
Cut up each melon together and add in a blender with syrup mixture just prepared and 2 tbsp Yeni Rakı. Mash altogether in the blender until it is getting smooth and soupy.
Set puréed melon in a separate bowl and make the mixture freeze.
